Generally speaking, hiking on an empty stomach can be more challenging because you will have to work harder to maintain your pace. Additionally, if you are not properly fueled, your body will start breaking down muscle tissue in order to produce energy. This can lead to fatigue and decreased performance. Ultimately, it is up to the individual hiker whether or not they feel comfortable hiking on an empty stomach.
